Pie crust made easy.

 My Grandma King was the queen of thanksgiving for one reason-Pie. I love pie. All pie.Pie filling flows in my veins. Except mince meat. I've never been able to get behind that one.
My struggle has always been the crust. Do you despise piecrust the way I do? How do the pie experts make two cups of flour into a perfectly beautiful crust? I don't know. I will probably never know, what I do know is that I have found a solution.
Tastes like summer.

I made my own pie crust recipe. It's pretty standard, the 'secret ingredient' in my crust? Increased measures.
I added a cup of flour and increased the other ingredients accordingly, and now there is plenty of dough so I don't have to scrape and scrounge trying to piece the thing together. Just beautiful flaky crustiness.

Last night we had a 'grown-ups only' party to attend and we were asked to bring a desert for 12. What better time to experiment with desert then when you are going to a party with a bunch of people you don't really know... right?

Pie in a 9x13 anyone?
Both of these pies are Peach, Plum, Black Cherry- our new favorite.
It took an hour and a half to cook, but it was pretty and delicious (equally important to me), AND- only took one batch of dough.

Without further adieu, The Easiest pie crust ever.
3 C White Flour
1/2 C  cold salted butter
1/2 C shortening blend (Lard and Veg)*
2 tsp kosher salt
Cut together until crumble, make well add water:

8-9 tbls Ice water

Cut until dough forms, do not over kneed. Use immediately or   refrigerate. 

*shortening blend is something you buys premixed. You don't have to mix it yourself, although I supposed you could.

Roll out on floured counter top. Make pie of your choice... cook at 425 degrees (F) until filling in the middle boils.bubbles (standard pie about 35 minutes, 9x13 about 80 minutes) . If you crust starts to get to brown- tent with foil. Then eat.

Kindergarten is....

So says you know who.
Sorry it's blurry, holding a squirmy Gid.
She didn't cry, we had a lovely time dropping her off, but when I went to pick her up she said, (and I quote) "Kindergarten is sooo BORING! All you do is sit and sit and sit..."
Hopefully they'll win her over on Friday.

Tomorrow I have a Kindergartner.

Ten years ago, I was starting my senior year of high school. 
Today, I am made my daughter's first school lunch.
Peanut butter w/ homemade berry jam.
Squeezy apple sauce.
Carrot sticks & Cauliflower.
A rice crispy treat and 35 cents (what does 35 cents buy... do you remember?)

All wrapped up pretty in her fuchsia lunch box.

Shelves... progress...

Proof my living room will not always look like cheap abstract art.
the living room still looks like this.
But the pile of lumber that was in the garage looks like this now:

1/2 of the shelves are assembled. 
I will finish trim, putty and sand them... install them in the living room... then start on the other (matching) set.
I've got to get them in so I can start saving my pennies to buy a fireplace to go right where that ladder is in the first picture.

No more until she's 11!

Havah is officially released from allvacination anxiety for the next 5.5 years. We celebrated with snow cones.

Tonight, I miss my Mom.

Tonight, I miss my mom. I miss her simple faith. I miss her telling me, "Everything always works out in the end."

Tonight somehow, I can't help but wonder- what about the middle?

Tonight, I pray, because that is the power I have.
Tonight I pray like my mother taught me,
"Heavenly Father, we believe that through thee all things are possible."
Tomorrow I will keep praying.
And the next day and the next day and the next day....
Trusting and moving forward.
Until someday, I'll wake up, and it won't be the middle anymore- it will be the end, and everything will work out.

Because, it is true, and this middle will pass, as all middles do.

But tonight, I wish she was here in the middle with me.

I liked the BFG, he is so great to me, because I love him. Because snozzecumbers are not yummy to me.  I know he knows he can feed them everlasting to those bad giants.

The book was a silly thing.

What was your favorite thing that happened in the book? When he feeded snozzecumbers to them.

Who is your favorite character? BFG. I like him because I love his ears.

What did you think about the dreams? They were so cool. How you catch them and they float around and how bad dreams and good dreams act and what colors they can be.

Who was your favorite character? The BFG, the Queen, Sophie and the soldiers. I thought the BFG was so funny since he said silly things like, "by gumdrops".

Is there anything else he said you thought was funny? "Get your Bellypoppers!" Is the other thing I liked that he said, he meant helicopters.

I like cars. 
My mommy has a big van, and whenever I can, I climb in and push all the buttons. 
This is my seat.
Well. Not really. 
I wish this was my seat (my real seat doesn't have any buttons).

My mom thinks that's funny, but I don't know why.

Papa Roy's Bodacious Snickerdoodle S'mores

I'm sold. Snickerdoodle s'mores are the way to go.

Want the best snickerdoodle recipe I have ever found?
Only one amendment do that recipe- 1/2 tsp cream of tartar. 
I am trying tomorrow, but I would also use 1 1/2 c of sugar... they're pretty sweet.

The places I find peace.

I was talking with my sister friend a couple of weeks ago about where the "ease" was is life.... mostly, acknowledving the lack of it.  We came to the conclusion that there isn't any. That isn't the purpose. But there is peace and joy and hapiness all the same.
Tonight, I have spent some time with words that bring me peace.
Reading in the Book of James, and my mother's last journal. Life is not easy. But as I read the scriptures and the faithful hopeful words of my mother, I am filled with peace.
